Overnight oats, with rainbow layers and a nut granola crunch

“A great breakfast to make the night before, if you struggle for time in the morning. This breakfast is low in sugar, with only the carrot and berries adding small amounts of sweetness”



Bowl mix
4 tablespoons organic oats
1 large carrot, shredded
1 cup of almond milk
3 table spoons of chia seeds
1 cup of almond milk
2 tablespoons of desiccated coconut  
2 tablespoons of almond flakes
2 tablespoons of goji berries
2 tablespoons of pomegranate  
2 handfuls of berries

Sugar free granola crunch
1 tablespoon of walnuts
1 tablespoon of goji berries
1 tablespoon of pumpkin seeds
1 tablespoon of hemp seeds
1 tablespoon of brazil nuts


  1. Add the shredded carrot to oats with the almond milk, and soak overnight in the fridge. Sealing in cling film or a container.

  2. Add water to the chia seeds and soak these overnight too in the fridge. Sealing in cling film or a container.

  3.  Lightly toast in a non-stick frying pan the desiccated coconut and almond flakes, until golden brown.

  4. Using a blender, lightly pulse all the granola mixture until it is lightly broken but not completely crushed.

  5. Remove your overnight oats and chia seed mixture from the fridge.

    Place one table spoon of oats in your bowl, followed by the chia seed mixture layered on top. You can repeat this is you would like multiple layers or feeling hungry!

  6. Add a healthy layer of the granola on top and with berries, pomegranate, desiccated coconut and almond flakes.
